An Evening at the Pumpkin Patch

We spent Tuesday evening at the cutest little pumpkin patch around. It was our first visit to Wilkinson's Farm, but it won't be our last. It was like something out of a movie.
Do you see that long springy stem in the middle? I wanted that one!
I just wanted him to look at the camera for one good selfie....
haha this was the best we got.
I think the tractor racing was for little kids, but you know Scott and I got on those mini tractors and laughed our heads off the whole time.
White pumpkins are my favorite!
Happy Fall Y'all!!

Saying Goodbye

A week ago my Papa Mac passed away. He was one the greatest men I have ever known. He loved me unconditionally. He made me feel special and important. He was the most kind person I have ever known. He served others and gave selflessly without ever expecting anything in return. I will miss his loving hugs that filled me with an unexplained happiness, all of his stories of growing up on his horse and his wise advice. After Scott and I got married he was the last to wish me goodbye before our honeymoon. He told me that his honeymoon lasted 51 years and he hoped mine lasted even longer. He loved my grandmother more than words could explain. The only joy I feel from his passing is the knowledge that they are together again and that he is no longer in pain. Reflecting on his life of love and service this past week has helped me reevaluate what really matters in life and the person that I want to become. I'm so grateful that families are forever. That one day I will see him and my Nana again.
This was the gorgeous sunset out of my papa's window the evening of his passing.
Although it was under poor circumstances, I was happy to spend a few days with my whole family (aunts, uncles and cousins included). I have one unbelievably amazing family.
After the funeral Saturday we needed something to lighten the mood so we went bowling. Believe it or not Scott and I had never been bowling together before...ever. We realized why quite quickly. Neither of are very good haha
How cute is my momma?

Life Lately

First off, what do you guys think of my new blog design????

Well, life has been good to us lately.
Thursday night I went to a fun blogger event with this babe hosted by cute Bri. I was on cloud nine when I found out the grilled cheese food truck had gluten-free bread! So ya, I was pretty happy! The nutella banana dessert sandwich rocked my world and the chicken pesto was a close second.
Friday night was date night and it was a great one! We haven't gone out to pizza since I found out about my celiac disease (so like 9 months). Scott was really craving it. We found out the pizza buffet in town has a gluten free option for only $2 more! That's extremely cheap for gluten-free and it was also delicious. I have a feeling we'll be going back!
Saturday a went on a beautiful morning run. The fall is so gorgeous here in Utah!
Sunday was great as always. Scott gave an absolutely amazing talk at church and I loved every minute of playing with the toddlers in nursery. Scott's best friend and his wife had their first baby on Thursday and so after church we headed up to meet the perfect little baby. She is only 5 tiny pounds with a head full of beautiful hair and the sweetest little face. I was completely content holding her for two hours while we chatted and laughed. It's so wonderful to have great friends!

I have a feeling this week will be even better :) Life is just better in the fall!!

Delicious and Easy Pumpkin Waffles

I am obsessed with pumpkin flavored everything!
We have these pumpkin chocolate chip cookies way too often and I'm always trying new pumpkin recipes.
I have tried a few different pumpkin waffle recipes lately and they were all missing a little something. So I experimented a little bit and this recipe is what came about. I absolutely love it and so does my hubby. They have just the right amount of pumpkin flavor, are fluffy and delicious. I hope you enjoy!

Ingredients
2 cups flour
1/2 cup sugar
1 tablespoon baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
2 eggs
1 1/2 cups milk
1 15 oz can pumpkin puree

Directions
-Mix dry ingredients together and then mix in milk, eggs and pumpkin.
-Use a waffle maker on medium heat (I have a Cuisinart waffle maker and I put it on level 3)
-Enjoy!
