Fall is my favorite season, by far! I love absolutely everything about it.
 Especially the clothes! It's the time of year I feel like shopping the most and I want ALL of these pieces!

San Diego Getaway

Since I had a week off between internships, we took a quick but awesome trip to southern California with our good friends. In fact, I had so much fun that I pretty much totally forgot to take any pictures. Oh well :)

We got there on Thursday night after a long drive and I hit the sack right away. Friday morning the boys went surfing and I tagged along so I could go on a morning run along the beach. The run was so beautiful and it was entertaining to watch the surfing.

Friday night we drove into downtown San Diego to spend the evening with my parents who happened to be vacationing in San Diego at the same time (we didn't plan that and didn't even realize we'd both be there until the week before). We ate at a delicious seafood restaurant on the marina.

Then we headed over to Mission Beach for dessert at my parents favorite spot. It's called the Baked Bear and if you're ever in San Diego this is a must! It's a little build your own ice cream sandwich shop that's delicious and well priced. Also, they have delicious gluten-free cookies!! YAY.

 Saturday we spent alllll day at the beach. It was heaven. 
We played in the waves, boogie boarded, napped, threw the football around and just enjoyed the ocean.

What a wonderful week at the beach. Now back to real life!

Quick and Easy Dutch Braid Tutorial

You've probably seen all of my instagram posts with my new favorite hairstyle. So I threw together a quick tutorial for anyone who hasn't learned how to do this. If you try it, tag me in your instagram pics! I want to see :) I love, love, LOVE this hairstyle because it really takes me 3-5 minutes and I usually do it with dirty hair with some dry shampoo (which I couldn't think of in the video!)

Gluten Free Protein Cheesecake

Ok, this recipe is AMAZING!!!
I've always been a lover of cheesecake. I mean who isn't?
And although cheesecake is usually gluten free minus the crust, I wanted to find a gluten free alternative that was also super healthy! This creation is the result!
One serving is only 160 calories and has 11g of protein!


1/2 C Almond Meal/Almond Flour
1/2 C Shredded dried coconut (sweetened)
2 Tablespoons melted coconut oil

1 egg
1 egg white
1 C Low-fat Cottage Cheese
1 C 0% Greek Yogurt
1/4 C low-fat cream cheese
1 Scoop vanilla whey protein
2 tsp lemon juice
1/4 C truvia sweetener (sugar can be substituted for a less healthy option)

  1. Mix almond meal, shredded coconut and coconut oil and press into the bottom of a pie dish.
  2. Bake crust for 5-10 minutes at 375 degrees F.
  3. Mix all of the filling ingredients and whisk together. 
  4. Pour filling over cooled crust and bake at 375 degrees for 30-35 minutes. 
  5. Let cool on the counter for 10 minutes then cool in the refrigerator for at least 30 minutes. 
  6. Cut into 10 slices, top with fruit and enjoy!

My Summer Internship

One of you fantastic readers asked me to write some general details about my internship this summer. I'm so glad that you suggested it, because honestly I wouldn't have thought to share any of the details, but I know that when I look back years from now I'll have wished I would've written about it. And maybe there's someone out there who's an aspiring speech language pathologist who wants to know what an internship at a Hospital entails.

My internship was eight weeks full time at the local Hospital.
Before you have your licence, you're not allowed to treat clients or patients without supervision. One of the Speech-Language Pathologists there was assigned as my supervisor and was always present when I was giving therapy. The first day he let me observe, but after that it was all me. I was very nervous, but I learned that I have learned more than I realized and though I'm not a professional yet, I was capable of giving therapy to a wide variety of patients. So, I basically took on my supervisors caseload while he watched and taught me.

As a speech therapist I worked in three different spheres at the hospital. We had patients in the Neuro Rehab unit; with these patients, we would have two 30 minute sessions a day. We also saw acute patients over in the ICU or other areas of the hospital. With these patients we mainly did swallow or cognitive evaluations and treatments. We also saw outpatient clients who weren't patients at the hospital who would come in for scheduled hour long sessions. I loved that I was able to see such a wide range! Many speech therapist either work just rehab or acute so it was great to experience all areas of the hospital.

At the hospital, speech therapists mainly treat swallowing, speech and cognitive difficulties that are a result of stroke, traumatic brain injury, intubation and anoxia. Although, there were many other things I saw while I was there, those were a large majority. We target safe swallow function, expressive and receptive language, voice, memory, attention, orientation, problem solving, intelligibility and lots of other things in therapy.

On top of giving therapy, there was lots of paperwork. I mean, it's healthcare. haha. But the paperwork probably was my least favorite part, but it wasn't horrible.

I absolutely LOVED my time at the hospital! It was fantastic and made me so excited for my future career in this field. I am so grateful I have found a career that is so rewarding and uplifting! My patients were amazing and inspired me so much. Though I'm sad it's over, I'm excited to start my next internship at a elementary school and a special education preschool in the coming weeks.

A relaxing weekend together

 Sorry that the only thing I blog about lately is our weekends, but honestly there isn't anything really blog worthy during the week. I wake up (sometimes early enough for the gym :/) bike to my internship, work all day, come home, eat, clean and go to sleep. I love it, but it doesn't leave much time for blogging. Anyway, this last weekend was really laid back and we loved it. On Friday, we went to the temple and grabbed some in-n-out afterward, then we babysat some of the cutest kids. The little 2 year old girl sang herself to sleep for an hour and it melted my heart. Saturday we slept in, ran errands, cleaned, rented a movie and stayed in. 
 Sundays are the best. We went to church which I always love and then we went for a drive up into the mountains. AH, I just love the mountains. They are so beautiful!
 Also, I'm obsessed with braiding my hair lately and am really getting the hang of it. 
Would anyone want a tutorial?

Friday Fun: Dinner and a Movie in the Stadium

Last weekend was great (like pretty much every weekend). We had lots of fun and got lots done. 
Friday night we went out to dinner at our absolute favorite restaurant, Maria Bonitas. We haven't been there in quite awhile so it seemed even better. 
Ya, we're still in love. 
This picture perfectly represents the wonderfulness of these chicken fajitas. Partially, because we ate them all before I remembered to take a picture. 
After dinner we went to the first ever movie night in the football stadium. It was so much fun! It kind of felt like going to the drive-in (or what I think going to the drive-in would be like).
