Quirks

Quirk; a peculiar trait.


We all have our little quirks.  They make us unique. They define our personality. They make life fun! They make us... US.


So, here are some of the quirks that make me ME!


- I love cereal. Like more than most people. If I don't have it for breakfast I feel like I need to have it at some other point in the day. I also love it for dinner. (Got this from my family) Last week I had cereal for dinner 3 times.


- when fall comes around I love the sound of crunching leaves. I make it a game to find the crunchiest ones possible. When I find a really good one I get excited.

- I have this thing about socks.  Always have. My dad named it "sock phobia". Generally I just don't like socks. They make my toes feel claustrophobic. Also, when I was little, if the seam of the sock is in the wrong place it bothered me like crazy.  (This whole not a fan of socks thing is really too bad since my feet are always icicles- I like blankets best)

- I love football like a man.

- I am one of those have to be on time people. A gift from my mom. I worry about being on time and am always early.

- I like maps. When studying abroad in London and traveling around Europe I would memorize maps of cities before we went there. It was fun and useful.

- I can sleep anywhere, anytime. In light or dark. In noise or quiet. As Scott says "you're one talented sleeper".

Wardrobe Wednesday: Coral and a Blazer

Can't believe it is already Wednesday again! 
Scott and I are on a little mini-vacation to Cali this week.
We are having so much fun and I can't wait to share all the photos once we get back. We stayed at my grandparents cabin yesterday in Tahoe and now we're on to San Fran!!

Today I'm missing...

Today I a missing a few things

London.
The most amazing city in the world. 

And all the amazing friends I made while I was there. 



I'm missing Summer. 
And it's Sunshine, boating and family trips. 


I miss my favorite place in the world.
Grand Teton National Park. 



And being able to do this there.


I miss these crazy awesome people. 
They are THE BEST.


 I'd much rather be in London with my lovies, in summer with it's sunshine, at Grand Teton National Park on my water-ski or with my amazing family.... than be taking TWO tests today!

Hey, but at least it's only 2 months till graduation! Senioritis is real

Life According to my iPhone



1. My newest obsession is EOS chap-stick.
2. Lucy and I after being outside for literally 30 seconds and completely covered in snow. Blizzard.
3. HA! My mom was scared she was going to be cold skiing. My dad made sure she wouldn't be.
4. Cadbury Eggs!!!! Best candy ever. Thank you Easter.
5. Cold but beautiful morning run in Colorado.
6. Cutest siblings in the world playing Guess Who?
7.  Created a new way to tie a scarf.
8. My husband is so sweet and wanted to make me a congratulations dinner for rocking my graduate school interview.
 Interesting combination of food:) -still yummy though

brookie or cooknie

What do you get when you combine the two greatest desserts on the face of the earth?
You get a sweet that surpasses all other sweets. 
It's not a cookie. It's not a brownie. 
It's a brookie or a cooknie.

Whatever it is, it is the PERFECT combination of cookie and brownie goodness.


And you're so lucky because I'm giving you the recipe to these Heavenly Cookie Bars!


Heavenly Cookie Bars

Ingredients:
+ 1 Cup Sugar
+ 1 Cup Brown Sugar
+ 3/4 Cup butter (softened the Christiansen way- explained below)
+ 3 eggs
+ 1 tsp vanilla
+ 2 and 3/4 Cup flour
+ 1/2 tsp salt
+ 2 and 1/2 tsp Baking Powder
+ One bag large chocolate chips (preferably Ghirardelli:)

Directions: 
+ mix sugar and butter together till smooth
+ add eggs and vanilla to sugar/butter mixture
+ mix dry ingredients together and add to wet ingredients
+ add 2/3 to 3/4 of the chocolate chips with dough
+ spread in 11x13 pan (greased!)
+ use remaining chocolate chips and sprinkle on top
+ bake for approx. 20 minutes at 350 degrees (or until edges are lightly browned)
+ eat right away for gooey wonderfulness or let cool for 30-40 minutes and they'll firm up.



My mom taught me how to perfectly soften butter- it really does make a difference! You know when you stick a whole cube in the microwave and the middle completely melts and the ends are still hard? 
Ya, this fixes it. 
Slice your butter into even pieces, place around the outside of a plate (equal heating) and microwave for about 20 seconds until they're perfectly softened. 


Make sure your mix everything till it is smooth. I prefer using the back side of a big metal spoon to mix everything together in these steps. It's kind of an arm workout...


Once all the dough is mixed and the chocolate chips are added, spread it out in your pan.
Make sure your pan is greased so they come out perfectly!


Add the last part of your chocolate chips to the top. 
This doesn't really change the taste. It just looks pretty!


These edges are perfectly brown- 
watch for this, then take them out of the oven.



Drool...

Wait till they cool to cut them or else they're a gooey yummy mess. 
Which is ok too.




Seriously, go make them now.

Come What May...

This morning I had my big Graduate School Interview.  I have been nervous about it for awhile now. But you know what? It went great!! And, I weirdly kind of enjoyed it. 

It's great to be done with the application process- because it's a long road! Now all I can do is wait and see. Still a few weeks before I hear back from all the schools. 

It's hard not knowing where I'll be or what I will be doing in just a few months from now, but I think this quote says it all.

I'm excited for the good times, the bad times, the trial and the joys.

Spicy Hummus & Lettuce Wraps


There are a few "must have in the fridge at all times" items here in the Hunter home- One of those is our favorite Spicy Sun-dried Tomato Hummus. 

I've kind of always liked hummus, but then I got a food processor as a wedding gift and a whole new world of hummus possibilities opened up to me! 

We like food with a kick! 
This hummus, has just the perfect amount. 
It's SOOOOO easy to make.
Did I say it's DELICIOUS?
You can use it in so many ways.
and..... this recipe makes enough to last a week, if not more. 

Spicy Sun-dried Tomato Hummus:

Ingredients:
+ 2 cans garbanzo beans or chickpeas (rinsed and drained)
+ 1 jar (7ounces)sun-dried tomatoes *hint* buy the big jar at Costco                      
+ 2/3 Cup Water                         
+ 3 Tablespoons Olive Oil
+ 2 garlic cloves halved
+ 1/2 tsp Salt
+ 1/2 tsp pepper
+ 1 Tablespoon Crushed Red Pepper Flakes (THE KICK)
     *if you don't too much spiciness, only use 1/2 Tablespoon

Directions:
1. Put everything in Food Processor
2. Process on High till smooth. 

THAT"S IT!
So Delicious, So Easy

I like to eat my hummus with tortilla chips or carrots.

My husband's favorite Lunch is Hummus Lettuce Wraps
aka- sandwich minus bun plus hummus.

He loves it and it's super healthy. You can't go wrong.

Super yummy lettuce wraps, and you could add or subtract whatever you like! The Husband likes turkey, pepper jack cheese, tomato, pickle and of course, hummus!

Yay for delicious and nutritious food!

The Travel Dress


This is my go to Travel Dress. When traveling, you want something that you can fold up really small and that doesn't wrinkle. This dress does all that and doesn't compromise style.
